Foraging Finds Its Way to the Kitchen

Foraged mushrooms, greens and berries are finding their way onto the best local menus. You feel it most in the East Village — call it, if you like, foraging comes to the kitchen.
"People here have always had taste — now they have the outlets," says Beatrix Delgado, a pastry chef. The cooking is confident enough to leave good ingredients largely alone.
On the plate
Look closely and the momentum is unmistakable. The room is unpretentious; the ambition is entirely on the plate. What is taking shape between the East Village and Council Bluffs would have seemed improbable not long ago.
"The talent was always here. What changed is that it decided to stay," said Ingrid Sinclair, a baker working near Council Bluffs.
Worth the trip
None of this happened overnight. It is the product of a hundred small decisions — about quality, about place, about the kind of life worth building in Iowa. What began as a niche is becoming, quietly, a defining feature of the state.
For now, it remains an open, evolving story. But if the last few years are any guide, the East Village is only getting started.
