The Cheesemakers of the Driftless Edge

Something is shifting in the Driftless region. Along the Driftless edge, a community of cheesemakers is doing world-class work. At its core: Driftless-edge cheese.
"It comes down to attention," says Nadia Vance, a restaurateur who has watched the change from the front row. The room is unpretentious; the ambition is entirely on the plate.
At the table
Spend an afternoon with it and the pattern comes into focus. The cooking is confident enough to leave good ingredients largely alone. The same current runs from the Driftless region to Des Moines, in ways few would have predicted a decade ago.
"The talent was always here. What changed is that it decided to stay," said Nadia Aldrich, a restaurateur working near Des Moines.
On the plate
None of this happened overnight. It is the product of a hundred small decisions — about quality, about place, about the kind of life worth building in Iowa. What began as a niche is becoming, quietly, a defining feature of the state.
For now, it remains an open, evolving story. But if the last few years are any guide, the Driftless region is only getting started.
