Something is shifting in West Des Moines. Iowa's most famous ingredient is being reconsidered by a new generation of chefs. At its core: pork, reconsidered.

"We are not trying to imitate the coasts," says Malcolm Aldrich, a chef who has spent years on it. Almost everything on the plate can be traced to a farm within an hour's drive.

Worth the trip

Look closely and the momentum is unmistakable. The cooking is confident enough to leave good ingredients largely alone. What is taking shape between West Des Moines and Iowa City would have seemed improbable not long ago.

"People assume nothing interesting happens out here," Julian Rios, a sommelier near Iowa City, told me. "They are wrong — and they are starting to notice."

Sourcing it

None of this happened overnight. It is the product of a hundred small decisions — about quality, about place, about the kind of life worth building in Iowa. What began as a niche is becoming, quietly, a defining feature of the state.

The chapter is still being written. On the evidence so far, West Des Moines has found something worth keeping.
