One chef's obsessive commitment to the Iowa seasons is redefining local fine dining. You feel it most in Decorah — call it, if you like, cooking the seasons.

"We are not trying to imitate the coasts," says Everett Bishara, a pastry chef who has spent years on it. The cooking is confident enough to leave good ingredients largely alone.

At the table

Look closely and the momentum is unmistakable. The room is unpretentious; the ambition is entirely on the plate. What is taking shape between Decorah and Pella would have seemed improbable not long ago.

"The talent was always here. What changed is that it decided to stay," said Cleo Nakamura, a baker working near Pella.

Sourcing it

None of this happened overnight. It is the product of a hundred small decisions — about quality, about place, about the kind of life worth building in Iowa. What began as a niche is becoming, quietly, a defining feature of the state.

The chapter is still being written. On the evidence so far, Decorah has found something worth keeping.
